What is a Dalmatian Rub?

Dalmatian Rub -

A simple salt and pepper combination is called a Dalmatian rub in Texas. The black pepper complements beef well and the salt helps bring out the flavor. The mix is usually equal parts of salt and pepper.

Good candidates for a dalmatian rub would be steaks, chicken and brisket. The Barbecued Tri-Tip recipe is an example of adding a few simple spices to a Dalmatian rub.
