Chicken Spice Rub


This is a spice rub that I originally created for my Cornish Game Hen recipe, but it is a great dry rub for any barbecued chicken. I jokingly call this the Bye-Bye Birdie Rub, because it's the best send-off you can give for any barbecued bird!

Recipe

Yield: Approximately 1/3 cup
Prep time: 10 minutes

Ingredients

3 tbsp brown sugar
1 tbsp kosher salt
1 tbsp black pepper
1 tsp garlic powder
2 tsp onion powder
1/2 tsp chili powder
1/2 tsp paprika
1 bay leaf, crushed
1 tsp thyme

Directions

Use this rub on any chicken, Cornish game hen or even game birds. You can use fresh or dry thyme, but don't skimp on the thyme or bay leaf. They are the key ingredients to this flavorful rub. If you'd like you can rub a little olive oil onto your poultry before applying a few teaspoons. Use liberally, especially when basting.

How About On Eggs?

This BBQ rub is also great on eggs. Saute some mushrooms with a little butter. Add some pickled jalapenos. Eggs. Bye-Bye Birdie Rub. A little cheese. Then you've got an great omelet. What else have you tried it on? Hit me up on Facebook and let me know.
